Ingredients:
- 1lb of Perennial Pastures steak of choice (Filet, Ribeye, Teres Major, Sirloin)
- 2 tbsp of capers, chopped
- 2 tbsp of red onion, finely chopped
- 2 tbsp of parsley, finely chopped
- Grated lemon peel
- 2 tbsp lime Juice
- 1 tbsp of Dijon mustard
- 1 pasture raised egg yolk

Salt and pepper to taste
Optional: Fermented Hot Sauce
Instructions:
- In a bowl, combine the chopped beef, capers, red onion, and parsley.
- Add the Dijon mustard and egg yolk to the bowl.
- Season with salt, pepper, and hot sauce to taste.
- Mix everything together until well combined.
- Serve the Steak Tartare immediately, either on its own or with toasted bread or crackers
