Steak Tartare

Steak Tartare is a classic French dish consisting of raw, finely chopped beef that is typically seasoned with herbs, capers, shallots, and a raw egg yolk. The beef is usually chopped by hand for a specific texture, or it can be pulsed in a food processor. All ingredients are then mixed together and the Tartare is formed into a mound on a plate. It is often served with toasted bread, croutons or even potato chips.

Ingredients:

  • 1lb of Perennial Pastures steak of choice (Filet, Ribeye, Teres Major, Sirloin) 
  • 2 tbsp of capers, chopped
  • 2 tbsp of red onion, finely chopped
  • 2 tbsp of parsley, finely chopped
  • Grated lemon peel
  • 2 tbsp lime Juice
  • 1 tbsp of Dijon mustard
  • 1 pasture raised egg yolk
  • Salt and pepper to taste

    Optional: Fermented Hot Sauce

Instructions:

  1. In a bowl, combine the chopped beef, capers, red onion, and parsley.
  2. Add the Dijon mustard and egg yolk to the bowl.
  3. Season with salt, pepper, and hot sauce to taste.
  4. Mix everything together until well combined.
  5. Serve the Steak Tartare immediately, either on its own or with toasted bread or crackers
