Summer Chicken Salad

This easy summer chicken salad is made with our corn and soy free pasture-raised whole chicken, fresh grapes, crunchy celery, and a creamy homemade mayo. It’s nourishing, high in protein, and perfect for light lunches, meal prep, or a quick dinner.

Ingredients:

  • Perennial Pastures Corn and Soy Free Whole Chicken
  • 3 celery stalks, chopped
  • 1 cup of bread and butter pickles chopped
  • 2 cups of grapes, halved
  • 1/2 cup of homemade mayo
  • Salt & pepper to taste

Homemade Mayo:

  • 1 pasture raised egg
  • 1 tsp mustard
  • 1 tbsp lemon juice
  • Pinch of salt
  • 3/4 cup of olive oil

Instructions:

  1. Roast whole chicken. Let cool, then shred and pull apart.
  2. In large bowl combine chopped celery, grapes, pickles and chicken.
  3. For your mayo, with an immersion blender, whisk together egg, mustard, lemon juice and salt. Once blended, slowly blend in olive oil.
  4. Add the homemade mayo to the large bowl and mix everything together.
  5. Season with salt and pepper to taste.
