A chicken leg quarter includes the thigh, drumstick, and part of the back, making it a hearty and flavorful cut of chicken that's known for its tender, juicy texture. Leg quarters are versatile and can be prepared in various ways, including baking, roasting, grilling, or slow cooking.

Ingredients

  • 2-4 Perennial Pastures whole chicken leg quarters
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried oregano

Instructions:

  1. Preheat the oven to 400°F (200°C)
  2. Pat the chicken leg quarters dry with paper towels and place them on a baking sheet lined with foil
  3. Drizzle olive oil over the chicken and rub it evenly over the skin
  4. In a small bowl, mix together the salt, black pepper, garlic powder, paprika, thyme, and oregano
  5. Sprinkle the spice mixture over the chicken, coating each piece evenly
  6. Bake the chicken leg quarters in the preheated oven for about 40-45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is crispy and golden brown
  7. Remove the chicken from the oven and let it rest for a few minutes before serving
