Buying a whole or half beef can be overwhelming. We take out all the guesswork for you. Our very own staff butcher works with our USDA processor to cut and pack your order. What is delivered to your door is the very best that each animal has to offer - from nose to tail!
What you get (225 lbs of product): With the purchase of this package, you can expect the following approximate breakdown:
- Over 80 lbs of Roasts & Cuts (an assortment of round roasts, chuck roasts, tri-tip, ribs, brisket, cross-cut shanks, stew meat, etc.)
- Over 35 lbs of Steaks (an assortment of rib-eye, filet mignon, New York, top sirloin, flank, skirt, picanha, hangar, flap, petite shoulder filet, flat iron, etc.)
- 80 lbs of ground beef
- 10 lbs of Bones
- 4 lbs of Beef Fat
- 9 lbs of Organs & Offal
With this USDA-inspected and finely butchered product, all the work is already done for you. You receive the beef delivered to your door. Our packaging is all vacuum sealed with clear plastic, and fully labeled so you know exactly what you're pulling out of the freezer to thaw!
Storage: You will need close to 8 cubic feet of freezer space for a half beef. For reference, a normal kitchen freezer is about 5-6 cubic feet (less if you have an ice maker). We recommend getting a deep freezer that does not automatically defrost, as this feature can shorten the overall shelf-life of the beef.
How to pay: your order here online is the deposit for your half beef. The remaining balance of $1,750 will be due within 2 weeks of delivery.
When do I get my beef? Delivery usually takes about 3-4 months from the time of deposit. The longer lead times are dependent on when the animals are ready to harvest. We will be in touch with an estimated date of delivery.

Refund Policy
All deposits are non-refundable. It’s important to understand that by reserving your share of our herd your deposit is used to plan the buying, raising, and processing of your cow for you. We appreciate your understanding of this and advise that deposits can be transferred to another person if needed. Thank you for trusting us to raise your beef.
Regenerative grazing
We mimic nature with our grazing and move cows frequently from paddock to paddock, so we don’t over graze or over rest certain areas of the ranch. We try to graze at the highest densities possible for the shortest amount of time possible and allow for recoveries up to a year long.
No grain
Cows did not evolve to live on grain. Grain requires a completely different set of enzymes for digestion and a completely different digestive process to unlock the nutrients contained inside the grain.
No chemicals
We don’t use any pesticides or herbicides on our pastures. Both pesticides and herbicides have been shown to kill soil life.
No tillage
We do not till any of our land to plant crops or have improved pastures. Tillage destroys soil structure and oxidizes organic matter.
Individually graded beef
We work closely with our processors to individually select only the highest quality beef from the best animals. We are also working on our breeding program, introducing breeds like the Corriente and Mashona to create a custom animal that finishes well on grass and is adapted to the mediterranean climate.
Animal welfare
We practice ""Bud Williams"" style low stress livestock handling techniques on the ranch. We don’t use cattle prods and we minimize yelling and quick movements which stress cows out.

FAQ
This is highly dependent on if there are kids and adults. And if the consumer is animal-based, carnivore or eats more moderate servings of meat. Also, will you be serving this meat to guests frequently?
i. 1/8 share for single or couple household: 3-4 months
ii. Quarter share for single/couple/small family: 4-6 months
iii. Half Cow share for family: 7-9 months
iv. Whole Cow for family: 9-12months
- Eighth = 2-3 cubic feet
- Quarter = 4-5 cubic feet
- Half = 7-8 cubic feet
- Whole = 15-16 cubic feet
All of our beef is processed in a USDA processing facility and vacuum sealed. We process and butcher the beef into smaller cuts, roasts, steaks and ground all individually packaged for you so it’s easy to prepare.
All of our meat is either dry or wet aged, and comes frozen which ensures maximum freshness once you thaw it out to consume.
Frozen meat is the best way to ensure maximal freshness and will last you a long time. This allows you to buy high-quality meat at an affordable price and stay stocked up for a longer time period.
We don't currently have a weekly or bi-weekly slaughter which is what’s required for a “fresh” (non-frozen) program. We are working towards getting our own USDA compliant slaughter facility on site which would allow us to do this.
Indefinitely according to food safety guidelines, which means frozen meat will last for a very long time in the freezer - but for maximal freshness, best flavor and texture, we recommend using it within 1 year.
We value the ancestral way of eating and honoring all parts of the animal. A large majority of the animal carcass is beef roasts from the different primals. Ground beef is made from all the trimmings from the animal which is also the majority of the animal carcass.
- Crock Pot is the easiest way to go. You can buy a crock pot starting from just $20. Depending on the size of a roast, you can cook it on low for 6-10 hours for a nice tender roast.
- Instant Pots are great options for slow cooking which is usually a bit faster than crock pots because of the pressure cooking.
- Oven Baking for roast beef. Low and slow for several hours.
- Smokers for low and slow bbq style meat. You can prepare a roast similar to a Brisket.
Our approach to eating and lifestyle is ancestral and nose-to-tail which means we honor all parts of the animal, and consume what we can. Nose-to-tail eating also offers us a variety of nutrients.
There’s simply not enough steaks on one animal carcass for people to be able to choose all steaks. Utilizing all parts of the animal in a cow share is the most sustainable, ethical and cost effective approach.
A large majority of our beef comes from San Diego. We also have a partner ranch in Opheim, Montana (North of Nowhere ranch) and a partner ranch in Fort Stockton, West Texas.
Both partner ranches have maintained cattle that are 100% grass-fed, finished and pasture-raised. Kevin Muno is working with the ranch managers/owners of the partner ranches to move towards more regenerative management practices.
In San Diego, we've got 2 ranches - one 8,000 acre ranch out in Fallbrook and the other 8,000 acre ranch (our main home ranch) in Warner Springs where we host our ranch tours (and where our herd is most of the time.) We move our cattle between both the Warner Springs and Fallbrook ranches in San Diego.
We fully manage our Warner Springs ranch and follow a regenerative approach to agriculture here.

We employ Temple Grandin’s low stress management practices during transportation and slaughter of animals. Temple Grandin works with feedlots & slaughterhouses and pioneered low-stress techniques.
Low-Stress Management Techniques:
- Vocalization standard as indicator of stress. (An animal making noise if stressed.)
- Animals are moving on their own. No abuse/physical means to move the animals.
- Humane stunning methods - Bolt to their head, stunning the animal, not killing it (so the animal is brain dead). The animal is killed once they bleed it out. Animal is rendered senseless before killing so the animal doesn’t carry stress when bleeding out.
Primarily Angus. We have a composite breeding program at our San Diego Ranch where we are working towards a cross between Angus, Corriente & Mashona with the goal of creating the optimal breed that’s resilient in Southern California climate, with a great yield for meat.
Our Montana and West Texas ranches are all Angus breeds.

We can only deliver to one address. We also have the option where you and your friends can all pick up at our San Marcos warehouse.
