Secure your family's food supply and purchase a custom processed cow from Perennial Pastures Ranch! Buying a whole or half animal is by far the most cost-effective way to buy beef.

Our custom cow package is different than our USDA butchered package. With your custom cow package, you purchase the live animal from us and we arrange the slaughter or harvest of the animal on our ranch in Santa Ysabel. You own the animal at the time of sacrifice, and you pay the butcher directly.

After the animal has been harvested on the ranch, transportation of the carcass to a local family butcher for processing is organized by us. We then communicate with the butcher on your behalf.

We educate you on all the many ways a beef carcass can be broken down. Do you want ancestral blend, organs, bones, Tomahawk steaks, roasts, etc.? We work with you to customize the cut sheet to your liking.  We recommend that your meat be hung and dry-aged for 25-28 days to allow natural enzymes to tenderize and enhance the flavor. 

After the animal has been aged and properly portioned out to your liking, the butcher will call you to arrange to pick it up. For a $200 pick-up fee, we can drive to San Jacinto, CA to pick up your order from the butcher and deliver it to you in our refrigerated van. 


How much does it cost?

We sell our whole and half cows as a live animal purchase, which avoids the use of a USDA processing plant and is far less stressful for the animal.

We harvest our animals anywhere from 24 - 36 months when they weigh 1000 - 1100 lbs. 

  • The live weight of the animal is the full weight of the animal living and breathing standing on the hoof
  • The hanging weight is the weight after the hide, blood, and inedible part are removed. The hanging weight is 60%-65% of the live weight
  • The cut weight is the weight of the actual meat, bones, and offal after it is dry aged for 21 days. The cut weight is 15% less than the hanging weight due to water evaporation as a result of dry-aging, saw cuts, and the removal of bones and other ligaments. 

How much does it cost? 

$4.00 / lbs live weight to the rancher

$300 for the harvest on the ranch 

$1.75 / lbs of hanging weight for dry aging and cut & wrap

The Math 

$4.00 x 1100 lbs (live weight) = $4400 to the rancher 

+

$300 to butcher for harvest on the ranch

+

$1.75 x 715 lbs  (hanging weight) = $1251.25 to the butcher 

$4400 + $300 + 1251.25 = $6151.25

$6151.25 / 607.85 lbs of beef = $9.80 / lbs. of beef (which is cheaper per lbs. than our price for ground beef!!!!!)

The custom cow is by far the most economical way to purchase from us. 

The breakdown of cuts usually ends up being: 

  • 45% ground beef 
  • 35% roasts 
  • 20% steaks 
  • and your portion of organs and bones. 

How much freezer space do I need? 

You will need close to 7-8 cubic feet of freezer space for a whole beef.
