Secure your family's food supply and purchase a custom processed cow from Perennial Pastures Ranch! Buying a whole or half animal is by far the most cost-effective way to buy beef.
Our custom cow package is different than our USDA butchered package. With your custom cow package, you purchase the live animal from us and we arrange the slaughter or harvest of the animal on our ranch in Santa Ysabel. You own the animal at the time of sacrifice, and you pay the butcher directly.
After the animal has been harvested on the ranch, transportation of the carcass to a local family butcher for processing is organized by us. We then communicate with the butcher on your behalf.
We educate you on all the many ways a beef carcass can be broken down. Do you want ancestral blend, organs, bones, Tomahawk steaks, roasts, etc.? We work with you to customize the cut sheet to your liking. We recommend that your meat be hung and dry-aged for 25-28 days to allow natural enzymes to tenderize and enhance the flavor.
After the animal has been aged and properly portioned out to your liking, the butcher will call you to arrange to pick it up. For a $200 pick-up fee, we can drive to San Jacinto, CA to pick up your order from the butcher and deliver it to you in our refrigerated van.
