Our grass-fed/finished Bavette, aka Sirloin Flap Meat is a large thin cut of meat with lots of marbling. Bavette can be used very similarly to skirt steak, or flank steak and is great for carne asada or steak frites. The cut comes from the flank of the carcass (but, it's not flank steak) and is a muscle that helps the animal breath. This means the flavors are rich, similar to skirt steak, and has a unique texture that's sure to please.
