Hanging tender, or hanger steak, is often called the "butcher's cut" because butchers used to swipe this before it got to the meat case for their own grills. The flavor is outstanding and full, and the beef has a great texture similar to skirt steak or sirloin flap meat. Marinate or use a dry rub and grill, or roast in the oven and slice thin.
